Ingredients

For the Rolls

  • 4 teaspoons active dry yeast
  • 1/2 cup warm water
  • 2 cups milk (scalded and cooled to lukewarm)
  • 1/2 cup plus 1 teaspoon sugar (separated)
  • 3 tablespoons melted unsalted butter (cooled slightly, plus additional for brushing)
  • 7-8 cups all-purpose flour
  • 2 eggs
  • 2 teaspoons salt

For the Cinnamon Honey Butter

  • 1/2 cup unsalted butter (room temperature)
  • 1/4 cup confectioners' sugar
  • 1/4 cup honey
  • 1 teaspoon cinnamon

Instructions

  1. Activate yeast: In an electric mixer bowl, dissolve yeast in the warm water with 1 teaspoon of sugar. Mix in the lukewarm milk, remaining 1/2 cup sugar, and enough flour to create a medium batter consistency.
  2. Let yeast bloom: Mix thoroughly and allow to stand for 8-10 minutes until the mixture becomes light and foamy, indicating activated yeast.
  3. Add wet ingredients: To the foamy mixture, add 3 tablespoons melted butter, eggs, and salt. Beat well to combine all ingredients.
  4. Form dough: Gradually add enough flour to form a soft dough. Turn the dough onto a lightly floured surface and let it rest for about 10 minutes.
  5. Knead dough: Knead the dough until smooth and satiny in texture.
  6. First rise: Place dough in a large bowl coated with cooking spray or oil, turning it over to coat all sides. Cover tightly with plastic wrap and place in a warm area to rise for 1 to 1.5 hours or until doubled in size.
  7. Punch down dough: Gently punch the dough down to remove excess air.
  8. Shape dough: On a floured surface, roll the dough into a rectangle about 1/2-inch thick. Fold the rectangle in half along the short edge, making it approximately 1-inch thick. Lightly roll together to seal the sides and let rest for 10 minutes.
  9. Cut and arrange rolls: With a dough scraper, cut the dough into rolls and place them on a greased baking sheet. Cover with a damp towel and let rise in a warm place for about 1 hour until puffed.
  10. Bake rolls: Preheat oven to 350°F (175°C). Bake rolls for 10-15 minutes or until lightly browned on top.
  11. Brush with butter: Immediately brush tops with additional melted butter to keep them soft and flavorful.
  12. Prepare cinnamon honey butter: In a medium bowl, beat the room temperature butter for about 30 seconds until lightly whipped.
  13. Add sweeteners and spice: Add confectioners' sugar, honey, and cinnamon to the butter and beat until smooth, scraping down the bowl sides as needed.
  14. Whip mixture: Continue beating on medium-high speed for 2-3 minutes until the butter is light and fluffy.
  15. Serve: Serve the warm rolls with generous amounts of cinnamon honey butter spread for a perfect complement.

Notes

  • Ensure the milk is cooled to lukewarm before mixing with yeast to avoid killing the yeast.
  • Flour amount may vary depending on humidity; add gradually until dough is soft but not sticky.
  • For a softer crust, brush rolls with melted butter immediately after baking.
  • Cinnamon honey butter can be stored in the refrigerator for up to a week; bring to room temperature before serving.
  • Allow proper rising times in a warm environment to ensure fluffy texture.
