Crispy, flavorful oven-fried chicken made with a crunchy panko coating, seasoned to perfection and baked to golden brown for a healthier alternative to traditional fried chicken. Perfectly juicy on the inside and irresistibly crunchy on the outside.

Ingredients

Egg Wash

  • 2 eggs

Coating

  • 1 cup panko bread crumbs
  • ¾ cup all-purpose flour
  • 1 tablespoon seasoning salt
  • 2 teaspoons paprika
  • ½ teaspoon pepper

Chicken

  • 2 pounds boneless skinless chicken breasts, cut into strips (about 3 or 4 breasts)

For Baking

  • ¼ cup unsalted butter (plus more if needed)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to prepare for baking the chicken and melting the butter.
  2. Prepare Egg Wash: In a shallow dish, whisk the 2 eggs until smooth and set aside for coating the chicken.
  3. Mix Coating: In a separate shallow dish, combine 1 cup panko bread crumbs, ¾ cup all-purpose flour, 1 tablespoon seasoning salt, 2 teaspoons paprika, and ½ teaspoon pepper. This mixture will be used to coat the chicken strips.
  4. Coat Chicken: Dip each chicken strip first into the whisked eggs, ensuring it is fully coated, then dredge thoroughly in the bread crumb mixture, pressing firmly so the coating sticks well. Place coated chicken on a plate and repeat for all pieces.
  5. Heat Butter in Oven: Place a rimmed baking sheet in the oven and add ¼ cup unsalted butter to it. Let the butter melt and the pan get hot, but monitor carefully to avoid burning the butter.
  6. Bake Chicken: Arrange the coated chicken strips on the hot baking sheet, spacing them evenly. Bake for about 20 minutes, flipping gently halfway through the cooking time. When flipping, add a little more butter if necessary. Bake until the chicken is cooked through, the internal temperature reaches 165°F, and the coating is golden brown and crispy.
  7. Serve: Remove chicken from the pan and serve immediately for best texture and flavor.

Notes

  • Make sure your baking sheet is rimmed to catch any butter drippings and prevent mess.
  • Using panko breadcrumbs ensures a lighter, crispier crust compared to regular breadcrumbs.
  • Butter adds flavor and helps achieve a golden crust; monitor carefully so it doesn’t burn.
  • Flipping the chicken halfway through ensures even cooking and browning.
  • Use a meat thermometer to verify the chicken has reached a safe internal temperature of 165°F.
  • For extra crispness, you can broil the chicken for 1-2 minutes at the end, but watch closely to avoid burning.
