Thecha Paneer is a quick and flavorful Indian-inspired dish featuring paneer cubes coated with spicy thecha, a pungent and tangy chili-garlic chutney. This recipe combines the bold flavors of thecha with the creamy texture of paneer, pan-fried to a golden brown perfection, making it a delicious appetizer or snack that can be prepared in just 15 minutes.

Ingredients

Thecha Coating

  • ¼ to ½ cup thecha
  • 2 teaspoons fresh lemon juice

Paneer

  • 6 oz paneer (cut into 1-inch squares about ½-inch thick)
  • ½ teaspoon kosher salt
  • 2 cups hot water (for soaking store-bought paneer)

Cooking

  • 1 tablespoon oil
  • 1 tablespoon cilantro (finely chopped for garnish)

Instructions

  1. Prepare Thecha: Pulse the thecha in a food processor until it becomes finer and more even in texture. Transfer the processed thecha to a bowl and stir in fresh lemon juice to add brightness and balance the heat.
  2. Soften Paneer: If using store-bought paneer, sprinkle the cut pieces with kosher salt and soak them in 2 cups of hot water for 10 minutes. This process softens the paneer and enhances its texture. After soaking, drain the water and pat the paneer pieces dry with paper towels.
  3. Coat the Paneer: Spread a thin layer of the thecha mixture on top of each paneer piece, pressing lightly with your fingertips so that it adheres well. Repeat this coating process on all sides, noting that the narrow edges might hold less coating, which is acceptable.
  4. Heat the Pan: Place a nonstick pan over medium heat and add 1 tablespoon of oil. Allow the oil to heat up to a medium temperature suitable for frying.
  5. Cook Paneer: Arrange the coated paneer pieces in a single layer in the hot pan. Cook each side for 2 to 3 minutes until they achieve a light golden brown color and a crispy exterior, enhancing the flavor and texture.
  6. Garnish and Serve: Remove the paneer from the pan and garnish with finely chopped cilantro. Serve immediately as a delicious appetizer or side dish.

  • Use a nonstick pan to prevent sticking and ensure even cooking.
  • This dish can be served as a snack, appetizer, or side dish with Indian meals.
  • Fresh cilantro garnish adds a refreshing contrast to the spicy coating.
