Ingredients

Cookie Dough

  • 1/2 cup (111g) salted butter
  • 1/2 cup (115g) granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups (228g) all-purpose flour
  • 1 tsp baking powder

Caramel Layer

  • 20 caramels, unwrapped
  • 1 tbsp milk

Chocolate Topping

  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookie bases.
  2. Cream Butter and Sugar: In a mixing bowl, cream together the salted butter and granulated sugar until light and fluffy to create a well-aerated dough base.
  3. Add Egg White and Vanilla: Mix in the egg white and vanilla extract until fully incorporated, providing moisture and flavor to the dough.
  4. Combine Dry Ingredients: Stir in the all-purpose flour and baking powder until the dough becomes uniform and holds together.
  5. Shape Cookies: Roll the dough out to a thickness of 1/4 to 1/2 inch. Use a round cookie cutter to cut out circles and place them on an ungreased baking sheet.
  6. Bake: Bake the cookie circles in the preheated oven for 6-8 minutes, or until they are puffy and no longer glossy on the surface.
  7. Cool Cookies: Remove from the oven and transfer to a wire rack. Allow the cookies to cool completely before adding fillings.
  8. Prepare Caramel: While the cookies cool, microwave the unwrapped caramels with milk in 1-minute increments, stirring every 30 seconds, until smooth and creamy.
  9. Spread Caramel: Spoon a few teaspoons of the warm caramel onto each cookie, spreading it to almost cover the surface evenly.
  10. Chill: Place the caramel-topped cookies in the refrigerator for 10-15 minutes or until the caramel is thoroughly set and cold.
  11. Melt Chocolate: Melt the milk chocolate chips in 30-second intervals in the microwave, stirring between each until the chocolate is completely smooth and melted.
  12. Top with Chocolate: Spread a small amount of the melted chocolate over the caramel layer on each cookie, creating a final glossy chocolate topping.
  13. Set Chocolate: Allow the chocolate to cool and harden before serving the Twix Cookie Cups for best texture and flavor.

Notes

  • Ensure the cookies are completely cool before adding caramel to prevent melting and sliding.
  • Use a microwave-safe bowl for melting caramels and chocolate to avoid overheating.
  • For easier chocolate spreading, let the melted chocolate cool slightly but remain pourable.
  • Store finished cookie cups in an airtight container in the refrigerator to maintain freshness and texture.
  • Substitute milk chocolate chips with dark chocolate for a richer taste if preferred.
