Ingredients

Cookie Dough

  • 1 cup unsalted butter (softened)
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 large egg yolk
  • 2 ¼ cups all-purpose flour

Chocolate Coating

  • 1 cup dark chocolate melting wafers
  • 1 cup white chocolate melting wafers
  • Nonpareils for decoration

Instructions

  1. Cream Butter and Sugar: Combine softened butter and sugar in the bowl of a stand mixer or large bowl using an electric hand mixer. Beat until the mixture is well-creamed and fluffy.
  2. Add Vanilla and Salt: Stir in vanilla extract and salt until fully incorporated, scraping down the sides of the bowl with a rubber spatula to ensure even mixing.
  3. Incorporate Egg Yolk: Add the large egg yolk to the mixture and beat until it is completely combined.
  4. Add Flour Gradually: With the mixer on medium-low speed, slowly add the all-purpose flour, mixing carefully. Scrape the sides and bottom of the bowl multiple times as the dough will be crumbly and dry at first.
  5. Form Dough Ball: Transfer the dough onto a clean surface and use your hands to gather it into a cohesive ball.
  6. Chill Dough: Flatten the dough ball into a disk about 1 inch thick, cover with clear wrap, and refrigerate for 15 minutes to firm up.
  7. Preheat Oven & Prepare Baking Sheets: Set the oven to 350°F (175°C) and line cookie sheets with parchment paper.
  8. Roll Out Dough: Transfer chilled dough to a lightly floured surface and roll it out evenly to about ¼ inch thickness using a floured rolling pin.
  9. Cut Shapes: Lightly flour cookie cutters and cut shapes from the dough. Place cut-out cookies on the ungreased, parchment-lined cookie sheets.
  10. Re-roll Scraps: Recombine the leftover dough scraps, roll out, and cut additional shapes to maximize cookie yield.
  11. Bake Cookies: Bake cookies at 350°F for 10-12 minutes, or until edges just start to turn lightly golden. Adjust time for size of cookies. Remove from oven and cool completely on racks.
  12. Melt Chocolate: Place dark and white chocolate melting wafers into separate bowls and melt according to package instructions.
  13. Dip Cookies in Chocolate: Line a cookie sheet with wax paper. Holding the base of each cookie firmly, dip the top surface into the melted chocolate of choice.
  14. Decorate: Immediately place dipped cookies on the wax paper with the chocolate side up and sprinkle nonpareils on while the chocolate is still wet. Alternate dipping between dark and white chocolate batches until all cookies are coated.
  15. Set Chocolate: Allow the chocolate to harden completely before serving or storing.

Notes

  • Make sure the butter is softened but not melted for best creaming results.
  • Chilling the dough helps prevent the cookies from spreading too much while baking.
  • Adjust baking time depending on cookie size to avoid over-browning.
  • Use high-quality melting wafers for smooth chocolate coating and easy dipping.
  • Store cookies in an airtight container to keep them fresh.
  • Nonpareils can be substituted with other sprinkles or finely chopped nuts if desired.
