A vibrant and healthy vegetable platter served with a creamy, herbed Greek yogurt dip. This quick and easy appetizer is perfect for gatherings, offering a fresh and colorful assortment of vegetables paired with a tangy, flavorful dip made from Greek yogurt and mixed herbs.

Ingredients

Dip Ingredients

  • 1 1/2 cups Greek yogurt (whole milk preferred)
  • 1/2 teaspoon garlic powder
  • 1 Tablespoon white balsamic vinegar
  • 1/3 cup mixed chopped herbs (dill, chives, basil)

Vegetables

  • Carrots (skinny, left whole)
  • Radishes (halved)
  • Sweet bell peppers (sliced)
  • Asparagus (woody ends removed)
  • Mushrooms (halved)
  • Tomatoes (whole)

Instructions

  1. Prepare the dip: In a medium bowl, combine the Greek yogurt, garlic powder, white balsamic vinegar, and mixed chopped herbs. Stir thoroughly until all ingredients are well incorporated. Cover and refrigerate the dip until ready to serve to enhance the flavors.
  2. Prepare the vegetables: While the dip chills, wash and chop the vegetables into grab-able pieces. Leave skinny carrots whole, halve radishes, slice sweet bell peppers, remove woody ends from asparagus, halve mushrooms, and keep cherry tomatoes whole. Feel free to choose your favorite vegetables if preferred.
  3. Arrange the platter: On a large serving platter, neatly arrange the prepared vegetables around the bowl of herbed Greek yogurt dip. Distribute colors and shapes evenly to create an attractive, inviting presentation for your guests.

Notes

  • Use whole milk Greek yogurt for a creamier dip, or substitute with low-fat Greek yogurt for a lighter version.
  • Freshly chopped herbs significantly enhance the flavor compared to dried herbs.
  • Customize the vegetable selection based on season and preference.
  • This dip can be prepared a few hours ahead to allow flavors to meld.
  • Serve immediately after preparation for optimal freshness.
