Ingredients

Chicken

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 teaspoon sea salt
  • ¼ cup extra-virgin olive oil, divided
  • ¼ cup cooking sherry vinegar
  • 2 small shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 teaspoons honey
  • 2 fresh thyme sprigs
  • ¼ teaspoon freshly cracked black pepper, plus more for serving
  • ¾ pound seedless red grapes, on the vine
  • 4 tablespoons cold salted butter
  • 2 tablespoons minced fresh parsley

Optional

  • Crusty bread, toasted for serving
  • 1 cup ricotta cheese

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and place a rack in the center position to prepare for roasting the chicken.
  2. Season the chicken: Evenly season all sides of the chicken breasts with sea salt to enhance flavor during cooking.
  3. Sear the chicken: Heat 1½ tablespoons of olive oil in a large ovenproof skillet over medium-high heat. Once hot and shimmering, add the chicken breasts and sear without moving them until they develop a golden crust, about 4 minutes per side.
  4. Prepare and add the sauce: In a small bowl, whisk together the remaining olive oil, cooking sherry vinegar, sliced shallots, garlic, honey, thyme sprigs, and freshly cracked black pepper. Pour this mixture over the seared chicken, turning the breasts to fully coat them, then add the seedless red grapes to the skillet.
  5. Roast the chicken and grapes: Transfer the skillet to the preheated oven and roast until the chicken reaches an internal temperature of 165°F (74°C) using an instant-read thermometer and the grapes become wilted, about 15 minutes.
  6. Rest and broil grapes: Remove the skillet from the oven. Transfer the chicken to a cutting board and let rest for 5 minutes before slicing. Turn on the broiler. Return the skillet to the oven and broil the grapes for 3-4 minutes or until they are slightly charred, then transfer the grapes to the cutting board with the chicken slices.
  7. Finish the sauce and serve: Stir the cold salted butter into the skillet sauce until melted and slightly thickened. Return the sliced chicken to the skillet, baste with the sauce, then sprinkle with fresh parsley and additional cracked black pepper. Serve immediately with the grapes and toasted crusty bread. If using, spread ricotta on the toasted bread and top with grapes before serving.

Notes

  • Use a meat thermometer to ensure chicken is fully cooked but remains juicy and tender.
  • Do not overcrowd the skillet to ensure even searing of the chicken breasts.
  • Seedless red grapes are ideal for this recipe; they soften and char nicely under the broiler without needing removal from the stems.
  • For a richer sauce, make sure the butter is cold before adding—it will help thicken the sauce properly.
  • Optional crusty bread and ricotta cheese add texture and creaminess to balance the tart and sweet flavors of the dish.
  • Fresh parsley can be substituted with fresh thyme or basil for variation in flavor.
