Ingredients

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper, plus more for serving

Sauce and Aromatics

  • ¼ cup extra-virgin olive oil
  • ¼ cup cooking sherry vinegar
  • 2 small shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 teaspoons honey
  • 2 fresh thyme sprigs

Additional Ingredients

  • ¾ pound seedless red grapes, on the vine
  • 4 tablespoons cold salted butter
  • 2 tablespoons minced fresh parsley
  • Crusty bread, toasted for serving (optional)
  • 1 cup ricotta cheese (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and position a rack in the center.
  2. Season Chicken: Pat the chicken breasts dry and season all over with sea salt.
  3. Sear Chicken: Heat 1½ tablespoons of olive oil in a large ovenproof skillet over medium-high heat. When the oil glistens, add the chicken and cook undisturbed until golden brown on one side, about 4 minutes, then flip and cook 4 minutes on the other side.
  4. Prepare Sauce and Add Grapes: In a small bowl, mix the remaining olive oil, sherry vinegar, sliced shallots, garlic, honey, thyme sprigs, and black pepper. Pour this mixture over the seared chicken, turning the chicken to coat fully. Add the seedless red grapes to the skillet.
  5. Roast Chicken: Transfer the skillet to the oven and roast until the chicken reaches an internal temperature of 165°F (74°C) and the grapes are soft and wilted, about 15 minutes.
  6. Rest and Broil Grapes: Remove the chicken to a cutting board and let it rest for 5 minutes, then slice. Keep the sauce in the skillet. Turn on the broiler, return the skillet to the oven, and broil for 3-4 minutes until the grapes are slightly charred. Transfer the grapes to the cutting board with the chicken slices.
  7. Finish Sauce and Serve: Stir the cold butter into the sauce in the skillet until melted and slightly thickened. Return the sliced chicken to the skillet, basting with the sauce. Sprinkle minced parsley and additional black pepper on top. Serve immediately with the broiled grapes and crusty toasted bread. For extra richness, spread ricotta on the bread and top with grapes before serving.

Notes

  • Using an instant-read thermometer ensures the chicken is perfectly cooked and safe to eat.
  • Broiling the grapes intensifies their sweetness and adds a subtle smoky flavor.
  • Feel free to substitute red grapes with green grapes if desired.
  • For a dairy-free version, omit the butter and ricotta or use dairy-free alternatives.
  • Serve with a light green salad or roasted vegetables to complete the meal.
