These Viral Chickpea Truffles are a simple, delicious vegan treat made with just three main ingredients: chickpeas, nut butter, and vegan dark chocolate. Perfectly sweetened and creamy, these truffles are dipped in melted chocolate and are customizable with toppings like cacao nibs, goji berries, and shredded coconut. They are easy to make, freeze well, and suitable for a vegan diet.

Ingredients

Main Ingredients

  • 1 (13.5 oz) can of chickpeas, drained and rinsed
  • 1/2 cup nut or seed butter (almond or cashew butter recommended)
  • 1 cup vegan dark chocolate chips, melted

For Dipping and Toppings

  • 1 cup vegan dark chocolate chips, melted
  • 1 tbsp coconut oil
  • Cacao nibs (optional)
  • Goji berries (optional)
  • Sprinkles (optional)
  • Shredded coconut (optional)
  • Nuts or seeds (optional)
  • Freeze dried fruits (optional)

Instructions

  1. Prepare Chickpeas and Melt Chocolate: Drain and rinse one can of chickpeas thoroughly. Melt one cup of vegan dark chocolate chips either in the microwave in short bursts or over a stovetop double boiler until smooth and melted.
  2. Blend Ingredients: In a food processor or blender, combine the rinsed chickpeas, 1/2 cup nut butter, and the melted chocolate. Blend for 45-60 seconds until the mixture is smooth and well incorporated.
  3. Form Truffle Balls: Using a cookie scoop, portion the batter onto a baking sheet lined with parchment paper. Place the baking sheet in the freezer for 15-20 minutes to allow the truffle balls to harden slightly. Afterward, remove from the freezer and roll the partially frozen mixtures into smooth, even balls. Return the balls to the freezer for another 10 minutes to firm up.
  4. Melt Dipping Chocolate: While the truffles harden, melt the additional dark chocolate chips combined with 1 tbsp coconut oil for a smoother coating. Use the microwave or double boiler method as before.
  5. Coat and Decorate: Remove the truffles from the freezer and dip each ball thoroughly into the melted chocolate. Place the coated truffles back onto the parchment-lined baking sheet. Optionally, sprinkle desired toppings like cacao nibs, goji berries, shredded coconut, nuts, or freeze-dried fruits on top before the coating sets.
  6. Final Freeze: Return the truffles to the freezer to harden completely, about 15-20 minutes, ensuring a firm chocolate shell.
  7. Store and Serve: Store the finished truffles in the refrigerator for 7-10 days or in the freezer for up to 30-60 days. Enjoy chilled or at room temperature.

Notes

  • The coconut oil in the dipping chocolate helps with smoothness and shine.
  • Truffles must be kept chilled to maintain their shape and texture.
