Ingredients
Lobster and Butter Mixture
1 pound uncooked lobster meat (claws, tails, or both)
½ cup unsalted butter
1 garlic clove, minced
¼ cup chopped fresh chives
3 tablespoons chopped fresh dill
½ lemon, juiced
Kosher salt and pepper, to taste
Buns and Garnish
4 to 6 split top brioche hot dog buns, warmed or toasted
Lemon wedges, for spritzing
Instructions
Cook the Lobster: Heat 2 tablespoons of the butter in a large skillet over medium-low heat. If the lobster meat has large pieces, chop them slightly, but leaving some large chunks is preferred. Add the lobster meat and minced garlic to the skillet. Cook while stirring occasionally until the lobster is bright pink, opaque, and cooked through.
Melt Remaining Butter and Prepare Buns: While the lobster cooks, melt the remaining butter in a saucepan over low heat. Brush the brioche buns with some of this melted butter and warm or toast them in the oven for a few minutes until golden and slightly crisp.
Mix Lobster with Herbs and Seasoning: Transfer the cooked lobster to a large bowl. Add a pinch of kosher salt and freshly ground pepper, all of the remaining melted butter, chopped chives, and fresh dill. Squeeze in the juice from half a lemon. Toss gently to combine all ingredients and adjust seasoning with additional salt and pepper as needed.
Assemble the Lobster Rolls: Divide the buttery lobster mixture evenly between the warmed brioche buns. Serve the rolls immediately with lemon wedges on the side for spritzing and your favorite potato chips as an accompaniment.
Notes
Use lobster meat from both claws and tails for a mix of textures.
Toasting the brioche buns adds a nice buttery crunch, but warming them gently is also fine.
The fresh herbs add brightness that complements the richness of the butter and lobster.
Adjust the amount of lemon juice to your taste for added freshness.
Serve immediately for the best flavor and texture.
