This Weeknight Wonton Soup is a quick, comforting dish perfect for busy evenings. Featuring tender frozen potstickers simmered in a flavorful broth enriched with shiitake mushrooms, fresh ginger, and aromatic shallots, it comes together in just 20 minutes. Garnished with scallions and an optional spicy chili crisp, this soup offers a delicious balance of savory, umami, and warming flavors.

Ingredients

Soup Base

  • 2 tbsp sesame oil or olive oil
  • 1 large shallot, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1 1/2 tbsp fresh ginger, peeled and grated
  • 1 tsp brown sugar
  • 5 oz shiitake mushrooms, sliced
  • 1 1/2 tbsp soy sauce, plus more to taste
  • 2 cups low-sodium chicken stock (preferably bone broth)
  • 1 cup water

Main Ingredient

  • 8 oz frozen potstickers or wontons (chicken, pork, or veggie)

Garnish

  • 1/4 cup scallions, chopped
  • Chili crisp, for serving (optional)

Instructions

  1. Heat the oil - In a large pot over medium heat, add sesame or olive oil. Once shimmering, add the thinly sliced shallot and sauté for 4 to 6 minutes until softened and fragrant.
  2. Add aromatics and mushrooms - Stir in the sliced garlic, grated ginger, and brown sugar, followed by the sliced shiitake mushrooms. Cook everything together for another 2 to 3 minutes until the mixture becomes aromatic.
  3. Deglaze and add liquids - Pour in 1 1/2 tablespoons of soy sauce to deglaze the pan, scraping any bits off the bottom. Then add the chicken stock and water. Bring the mixture to a rolling boil.
  4. Cook the potstickers - Add the frozen potstickers or wontons directly into the boiling broth. Cook for 2 to 3 minutes until the potstickers are heated through and tender.
  5. Finish and serve - Remove the pot from heat and stir in the chopped scallions. Serve the soup hot, with optional chili crisp on the side for added spice and texture.

Notes

  • Use frozen potstickers or wontons for a quick meal and no need to prepare wrappers from scratch.
  • Adjust soy sauce quantity to taste, especially if using regular sodium broth.
  • For a vegetarian version, substitute vegetable broth and use veggie potstickers.
  • Chili crisp adds a spicy, crunchy element but is optional for those who prefer milder flavors.
  • Shiitake mushrooms add umami but you can substitute with other mushrooms if needed.
